cool, cool gazpacho

This classic summer vegetable soup features V8 and is chock full of onion, pepper, cucumber and tomatoes, along with spiced garlic and pepper.

  • Total time: 30 minutes
  • Servings: 24
Ingredient Weight Measure
tomato , diced 63.0 oz. 2.5 qt.
V8® 100% Vegetable Juice 2 qt.
cucumber , peeled, seeded, diced 3.0 lb. 10.25 cup
Vidalia onion , chopped 10.0 oz. 1.75 cup
assorted bell peppers (green, red, yellow) , diced 10.0 oz. 2 cup
fresh parsley , minced 1.0 oz. 0.5 cup
cider vinegar 0.5 cup
garlic 1.0 oz. 3 tbsp.
hot pepper sauce 2 tbsp.
1. In large container with a lid, combine all ingredients. Cover.

CCP: Refrigerate below 40°F. at least 4 hours before serving.

2. Using an 8 oz. ladle, portion 1 cup into bowl.  Serve immediately.
