Low sodium vegetable juice is the secret ingredient in this easy-to-make bean salad featuring an assortment of canned beans, chopped peppers, onion and garlic.

Ingredient Weight Measure
Low Sodium V8® Vegetable Juice , 46 oz container 1
vegetable oil 0.375 cup
garlic powder 1.5 tsp.
black beans , canned, rinsed, drained 96.000 oz. 19 cup
small white beans , canned, rinsed, drained 96.000 oz. 18 cup
whole kernel corn , canned, rinsed, drained 48.000 oz. 8 cup
green pepper , chopped 32.000 oz. 6 cup
onion , chopped 18.000 oz. 3 cup
1. Mix all ingredients and stir until evenly coated. Cover and refrigerate at least 2 hours.

CCP: Hold at 40ºF. or lower. 

2. To Serve: Portion 1/2 cup onto serving plate. Serve immediately.
