1. Season the chicken with the first listed amount of salt and pepper. Dredge in the flour and shake off excess.

2. In a large sauté pan, heat 1/2 of the butter and 1/2 of the olive oil on medium heat. When the oil is hot, sauté the first half of the chicken breasts. Brown the breast about 3 minutes each side. When cooked, remove to a plate and add the remaining butter and oil and repeat the step above.

3. Pour off 1/2 of the oil and butter mixture from the pan. Return to the heat.

4. Add lemon juice, chicken broth.  Bring to a simmer, stirring well to incorporate pan drippings.

5. Add the capers, parsley, basil, Parmesan cheese, and black pepper. Simmer for 3 minutes.

6. Add the chicken back into the pan and simmer for 2 minutes.

CCP: Heat until internal temperature is 165°F or higher for 15 seconds.

CCP: Hold at 140°F or higher.

7. To Serve: Using spoodle, portion 1 chicken breast.
