1.In a large mixing bowl, combine all ingredients except sliced bread, reserving ½ cup green onion for garnish. Mix well.
2. Line bread slices on a sheet pan coated with non-stick cooking spray. Using #8 scoop, portion 1/2 cup of chicken filling evenly onto each slice.
Bake at 375°F for 10-15 minutes, or until cheese has melted or chicken filling has slightly browned.
CCP: Heat to a minimum internal temperature of 165°F for 1 minute.
CCP: Hold for hot service at 140°F or higher until needed.
3. To serve, portion 2 slices of chicken melt onto a serving plate. Garnish with remaining green onion. Serve immediately.
